Weekends are pretty much the only time we have where we don’t have (many) scheduled things to do. They’re pretty amazing. Now, that either leaves you with a TON of time to get your juices flowing and cook up a storm (which I like sometimes), or it lets you go out and feel the wind in your hair and the sun on your face (most of the time). Either way, I have some great ideas for some weekend meals that are healthy AND free up your time to have fun!
This is from Cooking with a Wallflower, and boy, does it look great! The best part is, it “cooks” itself for you overnight! Minimal prep, maximum flavour to get you ready to take a hike or visit some sights around town.
Having a girls’ night? A Couples game night? Is there a Sports game on (Go sports!)? Whatever the case may be, I got you covered for healthy apps to please your guests!
2. Hot Cauliflower “Wings” with (Bonus) Light Blue Cheese Dip
I don’t really like ranch myself, and a lot of the recipes I saw were for healthier ranch dips. So, if you’re like me and LOVE da cheese, this dip (healified with a dose of protein rich greek yogurt) should be sure to please!!
THIS is probably my favourite food. I can’t get enough dill-iciousness when I go out with friends. The problem is that they’re all deep fried. Most of the flavour is in the pickle anyway, so this one is a no-brainer to makeover into a healthier snack. The dip is a little on the indulgent side (But that’s good, remember?), so eat mostly pickle. You won’t be disappointed!
4. Turkey Burgers with Avocado Relish (courtesy of the LCBO – can’t go wrong)
IT’S ALMOST BBQ SEASON!! The biggest challenge when it gets warm and eventually hot is that you want food cooked quickly and you don’t want to use your oven to potentially heat your house. BBQ to the rescue!!! It’s so easy to grab burgers and big ol’ sausages to fit that bill, but you don’t have to! These burgers are packed with crazy flavour and an avocado relish is never banned from my house!
Form into sliders for a gathering, or even make ahead and freeze with pieces of parchment paper in-between them. Grab and grill, baby!
Now, I love brunch. It is my absolute favourite thing in the world. It’s kind of scary how much I love it. When I get a Benedict, I hold the sauce (I hate hollandaise more than anything) and ask for runny poached eggs. That meets my requirement for something saucy just fine. If you can’t live without that creamy mess though, have a look at the healthier version from Abs in Progress or the vegan one Whole Foods above. Nut butters are just so healthy with their omega-3 fats and whatnot!

Wanna sleep in on Sunday?? Rough night from the party/sports game/game night on Saturday? I hear that, people! This is a great recipe (if you have enough co-ordination to do some late night sautéing) that needs minimal attention in the morning and has a delicious kick for the morning after. Pair it with a caesar for some hair of the dog action.
7. Burrito Bowl (Or any variation of bowl really)
Well, we need SOMETHING for in-between breakfast and apps, right?? If you use some pre-cooked chicken or even leftover roast chicken with some cajun spice (yum) this takes seriously 10 minutes. Talk about quick! And it needs to be quick – you only have 2 days in a weekend.
