Ah, May 5th. Cinco de Mayo. While it may not be Mexican Independence Day, it is certainly a day to celebrate Mexican food. Not that we need a specific day, per se, it’s nice to have one though! Mexican food was very limited for me in Newfoundland growing up (mainly due to our aversion to anything spicy hot), so once I moved to Toronto I had so many chances to try a lot of tasty things I was missing out on.
I have been trying to come up with inspiration for dinner today in keeping with the holiday, and I found just too many amazing ideas to eat in one sitting, so I decided to share the spoils with the internet in one place.
Healthy Cinco de Mayo Recipes:
Guacamole Devilled Eggs – When I saw this one, I pretty much landed in heaven! I am in love with avocados and guacamole is pretty high up on that list. And devilled eggs? Pass me the plate please! Avocados are full of B vitamins and healthy fats and eggs are a complete source of protein.
Pico de Gallo – If there is any plan to include a salsa in any Cinco de Mayo festivities, please make it a homemade pico de gallo. It fits every criteria for health – full of veggies, fat free, vegan, gluten free, paleo friendly, egg free, dairy free, and the list goes on forever!
Fish Tacos – These are one of those amazing discoveries I found since moving, though it is definitely something that the east coast should be all over (even though I know it was a west coast thing) since they tend to live on fish. Normally super deep fried and unhealthy, making them over on the grill puts them on this list!
Turkey Taquitos – Who doesn’t love a taquito?? Bake them instead of frying them, and you’ve got a great option!
Churros! – Baked ones that is! They are called donut holes on the site (which to a Canadian is like code for Timbit) and for 2 are only 150 calories. Moderation is key to happy celebrating!
Cocktails – There are a few on this site, but this one is only 145 calories and looks amazing. While it’s true that alcohol can be a big empty calorie sinkhole, it’s nice to have a cocktail or two from time to time!
So there you have it! There were too many to include them all today, but let me say, a good fish taco with slaw is one of my favourite things. They will all go in the recipe books though, since it’s nice to have a little Cinco de Mayo all year long.
